LalBrew LoNa Low Alcohol Hybrid Yeast - Lallemand
The non-alcoholic and low-alcohol beer category is growing faster than any other segment in craft brewing — and for the first time, brewers have a yeast that meets the challenge without sacrificing quality. LalBrew LoNa changes the game for NA brewing.
Perfect for these beer styles: Non-Alcoholic Lager, Non-Alcoholic Pale Ale, Low-ABV Session Beer, Non-Alcoholic Wheat Beer, Low-Alcohol IPA, Non-Alcoholic Amber Ale.
LoNa is the world's first maltose-negative Saccharomyces cerevisiae strain purpose-developed for low and no-alcohol brewing. Because it cannot consume maltose or maltotriose — the main sugars in wort — it produces very little alcohol while still completing a proper fermentation. The result is a beer that tastes like beer, not like unfermented wort.
The aroma and flavor profile is clean, neutral and completely free of phenolic compounds. Crucially, LoNa significantly reduces aldehydes — the compounds responsible for the worty" or "green apple" off-flavors that plague so many commercial NA beers. Your low-alcohol brew will taste fresh, clean and genuinely enjoyable.
Important note: pasteurization is required after fermentation to ensure microbiological stability, as LoNa does not produce sufficient alcohol to act as a preservative. This is standard practice for commercial NA beer production.
If you want to brew genuinely good non-alcoholic beer at home or in your brewery, LoNa is the tool that makes it possible.
