Description

LalBrew Diamond is a true bottom-fermenting lager yeast (Saccharomyces pastorianus) of traditional German origin, propagated and dried by Lallemand to deliver consistent, reproducible lager fermentations in a convenient dry format. It produces a clean, neutral profile that lets malt and hops express themselves — the cornerstone of any quality lager.

Perfect for these beer styles: German Pilsner, Czech Pilsner, Bohemian Pilsner, Munich Helles, Munich Dunkel, Vienna Lager, Märzen, Oktoberfest, Bocks, Schwarzbier, American Lager, Japanese Rice Lager.

Fermentation properties:

  • Temperature range: 10–15 °C (50–59 °F)
  • Attenuation: ~80% (high)
  • Flocculation: high — yeast settles quickly and tightly after fermentation
  • Alcohol tolerance: 13% ABV
  • Aroma: clean, slightly malty, very low sulfur and diacetyl when fermented cool

Pitching and storage: recommended pitching rate 100–200 g/hl (≈ 23–46 g per 23 L). Rehydrate in pre-boiled water at 25–29 °C for 15 minutes, or pitch directly into the wort. Best stored refrigerated at 4 °C; protect from light, moisture and oxygen.
