LalBrew Abbaye Belgian Ale Yeast - Lallemand
The great Belgian abbey beers — Dubbel, Tripel, Quadrupel — represent some of the most complex and rewarding brews in the entire world of beer. Their rich interplay of dark fruit, spice, alcohol warmth and deceptive drinkability comes not just from the recipe but from the yeast. LalBrew Abbaye captures that authentic abbey character in dry format.
Perfect for these beer styles: Belgian Dubbel, Belgian Tripel, Belgian Quadrupel, Belgian Strong Dark Ale, Belgian Strong Golden Ale, Belgian Blonde Ale, Witbier (with more yeast character), Abbey Ale, Trappist-style Ale, Winter Warmer.
Of Belgian origin and selected for performance across a wide gravity range, Abbaye produces the layered fruity and spicy profile characteristic of traditional abbey fermentation. Expect notes of ripe stone fruit, banana, dried plum and cherry at lower temperatures with increasing spice, pepper and complexity as fermentation temperature rises. A touch of warming alcohol character adds authenticity to higher-gravity styles.
Alcohol tolerance of 14% ABV makes Abbaye capable of fermenting to completion even in massive Quad or Strong Ale worts that would stall other strains. Medium flocculation and good attenuation (77-83%) ensure complete fermentation and a satisfying finish. Fermentation at 17-25°C with a temperature rise toward the end of fermentation aids complete attenuation and reduces diacetyl.
For anyone passionate about Belgian abbey traditions, Abbaye is an indispensable strain. It brings authenticity, complexity and the unmistakable soul of Belgian brewing to your homebrew.
