Description

Belle Saison is the original and still one of the finest dry saison yeasts available — a true classic that has introduced countless homebrewers to the joys of Belgian farmhouse brewing. If you want an authentic Saison with real character and proper attenuation, this is where you start.

Perfect for these beer styles: Saison, Farmhouse Ale, Bière de Garde, Belgian Golden Strong Ale, Belgian Tripel (high attenuation component), Summer Ale, Grisette, Table Beer, Hoppy Saison, Saison IPA.

Unlike LalBrew Farmhouse, Belle Saison retains its diastatic activity (STA1 positive), meaning it can ferment dextrins that most yeasts cannot. This is what gives authentic saison its bone-dry finish and seemingly impossible attenuation — Belle Saison regularly achieves 86-94% attenuation, producing beers that are remarkably dry and highly carbonated.

The flavor profile is quintessentially Belgian: fruity esters, peppery phenols, floral aromatics and the characteristic dry finish that defines great saison. The yeast also promotes hop biotransformation through β-glucosidase activity, making it a brilliant choice for hoppy saisons where you want to maximize aromatic complexity from your hop additions.

Important note for packaging: allow full attenuation to complete before bottling or kegging. Given its diastatic nature, conditioning time is particularly important. Belle Saison ferments happily at 20-35°C and actually thrives at higher temperatures — pushing fermentation temperature during conditioning accelerates attenuation completion.
