Description

Nottingham is a legend. Originally developed in England and now produced by Lallemand, this high-performance ale yeast has earned its place in breweries and homebrew setups around the world as the definitive all-purpose strain. If you could only have one yeast in your fridge, this would be a very strong argument for making it Nottingham.

Perfect for these beer styles: English Pale Ale, American Pale Ale, IPA, Double IPA, Porter, Stout, Oatmeal Stout, Imperial Stout, Amber Ale, Brown Ale, Barleywine, Kölsch-style, California Common, Cream Ale, Scottish Ale, Mild, Old Ale, Strong Ale.

What makes Nottingham special is its remarkable combination of qualities. It ferments cleanly and neutrally across an unusually wide temperature range of 10-22°C, meaning you can brew lager-adjacent styles at lower temperatures or push it warm for faster turnaround without worrying about off-flavors. It produces very low ester and fruity aroma levels keeping the focus firmly on your malt and hop bill.

High flocculation means it drops out of suspension quickly and thoroughly, leaving bright clear beer. High attenuation ensures a dry crisp finish that balances rich malt profiles beautifully. Alcohol tolerance up to 14% ABV makes it a natural choice for big imperial styles that would challenge other yeasts.

Nottingham is the yeast that never lets you down. Reliable, fast, forgiving and consistent batch after batch — it truly earns the title of house yeast.
